I am making a Greek dinner for 6 in 2 weeks, several guests deal with diabetes issues. I have tested pastitsio recipe with grain+lupini bean pasta & it came out great (your recipe).

My challenge right now is making grape leaves with brown rice as it is healthier for diabetics. Tried long grain brown rice and it was not a great success, today I am trying short grain brown rice … I am thinking of baking them at 350 instead of stove top for an even cook. Should you have any words of advice that would be greatly appreciated.

My husband and I love them. I cooked the meat before assembling them the first time, but then tried making them afterwards without cooking the meat. Using raw hamburger made rolling them much easier for me. I use less rice to meat ratio, but the flavor profile is perfect in your recipe. Thank you for sharing your recipe and your technique to make them. And I use our own fresh grape leaves that I’ve cleaned and blanched. I want to try freezing some leaves to use in the winter.
