I don’t think I’ve ever had a better falafel; of course the toppings (feta, kalamatas, cuke, tomato and tahini dressing) didn’t hurt, either. Instead of deep frying I cooked patties in a couple tablespoons of oil, which they soaked up immediately, then spritzed with evoo before turning; this method worked good and I had no problem with patties crumbling. Other changes were more chick peas (whole pound bag), halved the garlic (4 lg. cloves), slightly rounded tablespoons on spices and slightly under a teaspoon of cayenne (still too hot, though). All in all, this recipe is a keeper. Thank you!
