Hi, Kathy! I’m Summer and I work here at The Mediterranean Dish. You can use canola oil instead of olive oil and the recipe should work just fine. The taste won’t be quite as rich because olive oil adds a lot of flavor (and added health benefits) over canola oil which is a neutral oil.

Hello! I’m so glad you enjoyed the cake! Here are a few tips that may help prevent that dip: avoid over-mixing the batter, use room temperature ingredients, avoid opening the oven door (sudden temperature changes can affect rising), and when you think it’s done, double check the center to ensure it’s cooked through.
